A Cooking Fool
Cesar Salad

This salad originated at Caesars Restaurant in Tijuana, Mexico. It was a last minute throw together salad and ended up being the house salad (It comes with every meal) and popular everywhere. It's one of my favorites. There are currently many versions of it but this is the original recipe with one secret ingredient.
1 head Romaine lettuce
1/4 cp Extra virgin olive oil
1 tbsp Dry Mustard
Juice of one lemon
1 coddled egg (put egg in boiling water for 30 seconds)
1/4 tsp marjoram
1 tbsp Worcestershire sauce
1/2 can anchovies, mashed
1 tsp Durkees Sauce (secret ingredient)
3 garlic cloves minced
Parmesan cheese
Combine garlic and olive oil and let sit to flavor the oil while you prepare the lettuce. Remove any tough outer leaves. Break the lettuce into bite size pieces, do not chop. Place in a colander and rinse leave thoroughly. Place in spinner and dry thoroughly. If you don't have a spinner put lettuce in a clean towel, go ouside and spin it over your head or something, anyway the lettuce needs to be dry.
Add the rest of the ingredients, except parmesan cheese to oil and garlic. Mix thoroughly. Place lettuce in a salad bowl, sprinkle liberally with cheese and mix. Pour dressing over lettuce and mix. You can add croutons if you wish, I prefer some good garlic bread. A glass of white wine and you have heaven!! mm mm mm
