Sausage, Peppers & Onions with a twist

Sausage with Peppers, Onions, and Beer!
Yes Beer! This recipe serves 6 football fans but can be easily modified to feed any number..This is real guy food..Beer in the recipe and beer in the hand..whoo hooo..

Ingredients
3 tablespoons olive oil
3 pounds Italian sausage links
3 red bell peppers, sliced
2 green bell peppers, sliced
2 large red onions, sliced
3 cloves garlic, chopped
1(12 fluid ounce) bottle of beer
1 (6 ounce) can tomato paste
3 tablespoons chopped fresh oregano
3 tablespoons chopped fresh cilantro
2 tablespoons hot sauce
salt and pepper to taste

Directions
1. Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Set aside. Add peppers, onions, garlic and tomato paste. Saute until soft. Season with oregano, cilantro, hot sauce, salt and pepper. Cut sausages into bite size pieces Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Cover, and simmer until onions, peppers and sausages are done.. Put the whole mess on a good quality sub roll and let the games begin...!!!
