A great use of Green Chili. Ingredients: 1 egg per burrito Chorizo sausage skin removed Colby, Jack or Cheddar cheese or a combination of all. You can now purchase pre-shredded cheeses in the supermarket. For Mexican I buy what is called the Mexican blend, cheddar, jack and colby.. Green Chili S&P flour tortillas Directions: Cook Chorizo until done. Add eggs and S&P and scramble til done. Place tortillas in a dry skillet and heat on each side til pliable. Place tortilla on a plate, place sausage and egg mixture on tortilla and roll. Add some green chili over burrito, add a bunch of cheese, place under broiler till cheese melts. *Note; you can substitute bacon or pork sausage for the chorizo.. Happy breakfast!! The Fool
