Hot Sausage Tacos

Try something new the next time you have tacos and use sausage in place of the beef. Everyone loves to assemble their own - and there's less work for the cook! The original recipe used italian sausage but I'm a fan of Chorizo which is what I use. I also prfer soft taco shells but crisp will also do. Your choice.. Ingredients 1 pound hot Italian sausage or Chorizo 1/2 (8 ounce) jar taco sauce 6 taco shells 1 cup shredded Cheddar cheese 1/2 large onion, chopped 1 tomatoes, chopped 1/8 head iceberg lettuce, shredded 1/2 cup fresh cilantro sprigs and bell pepper triangles (optional) Directions 1.Crumble sausage into skillet; cook over medium-high heat until browned, stirring occasionally. Drain off any drippings. Stir in taco sauce. simmer 5 minutes. 2. To assemble tacos, place 2 tablespoons sausage mixture in each taco shell and top evenly with cheese, onion, tomatoes and lettuce. Serve hot with refried beans. Refrigerate any leftover filling.
