This is the one I make more often than any other. Makes about 6 tacos. Some ingredients I don't measure. Use your own judgement Ingredients: 1/2 lb ground chuck 1/2 medium onion 2 cloves garlic 1 tsp pure chile powder 1 tsp ground coriander 1 tsp ground cumin 1 tbsp dried cilantro leaves S&P to taste Note* I sometimes add some diced pickled jalapenos to meat mixture to give it an extra kick. Corn tortillas of your choice, see previous post.. Directions: Mix chuck with all ingredient except tortillas Saute onion until soft, about 3 minutes Add meat mixture and cook until done. Fill tortillas with meat and garnish with cheese(you can now get a pre-shredded Mexican cheese mix) ,diced onion, tomatoes, salsa and lettuce in that order. Serve with a side of refried beans and cold beer..MMM
