A Cooking Fool
Orzo Tabbouleh

In Response To: Pasta ala Siciliano (The Fool)
A very simple Orzo salad. Makes a great side dish..
Ingredients;
Serves 6-8
1/2 cup Orzo
1 cup fresh mint chopped
1 cup fresh parsley chopped
1 14 oz. can chopped or diced tomatoes drained (San Marzano if available) or 3 cups fresh peeled, seeded and finely chopped.
1/2 cup green onions chopped
2 tablespoons lemon juice
1 tablespoon extra virgin Olive oil
1 clove gatlic minced.
Directions;
Cook pasta according to package directions.
Combine all ingredients; mix well. Cover, chill thoroughly.
That's it!
