A Cooking Fool
Ovin Rosted Potatoes

This is an alternative to fried spuds. No fat and I believe better tasting. If you are going to cook something like chicken etc. in the oven it's a natural. The spuds and the murdered bird, cow, pig or whatever, cook at the same time.
You can either slice or quarter the spuds. Soak them in cold water for 15 to 20 minutes to remove the starch (makes the crunchier outside and softer inside). Dry thoroughly.
Coat with Olive oil, S&P, the herbs of your choice and place in a preheated 400 degree oven. It takes about 30 to 40 minutes give or take until lightly browned.
