A major staple of Mexican food is Salsa. There are many variations but the basic (Pico de Gallo) is simply:
Fresh tomatoes,
Jalapenos, or the chile of your choice (there are many)
Cilantro
Lime juice
Garlic
V8 Juice
S&P
Let sit at room temp for at least 30 minutes to let the flavors blend. I serve this with pretty much everything.
Meat, fowl, fish, eggs, just plain old chips, you name it.
