Curied Turky Soup w/Cocanut Milk and Penuts

Ingredients:

1 medium sized cooked turkey breast cut into 3/8" cubes
3 chicken boullion cubes
1 medium white onion, lightly sauteed in olive oil
1 cup blanched, roasted and salted peanuts (soak twice in hot water to remove some salt)
3 cups water
1 can coconut milk
3 tbs mild curry powder
1 1/2 cups white jasmine rice

Combine all ingredients in cooking pot except rice. Bring to boil, add rice and drop temp to simmer. Simmer 1 to 1 1/2 hours, adjust curry powder if you want more flavor.
this soup is very good the first day, but it gets better if you cool it over night and reheat.
