Asparagus

Asparagus is one of the healthiest and most flavorful vegetables.
It can be prepared in a variety of ways.
It can be simply sauteed with garlic, roasted, steamed (don't boil it as it will lose too many nutrients) used in casseroles, omellets, soups, salads. Preparation is simple. With a vegetable peeler, peel the stems as the outer layer is a little tough and cut off about 1/4 inch from the bottom. When purchasing make sure the head is tight and bright green. Enjoy
