Aspargus Omlet

Aspargus is great in a an omlet. Peel and cut off 1/4 inch from the bottom. Steam, or place in 1/4 inch of water in a saucepan or saute' with a little olive oil and garlic until done. Leave spears whole.
Prepare an omlet as you normally would, when almost done place aspargus on top, fold omlet and serve. You can aso add a little parmesan if you wish..
